This cookie is exactly why I love baking. I took something as simple and nostalgic as cinnamon toast — bread, butter, sugar, cinnamon — and turned it into a cookie.
I make sourdough crumbs, toast them with butter and cinnamon sugar, then bake them right into brown butter cookie dough and roll the outside in more cinnamon toast crumbs. I also add a tiny bit of espresso powder — just enough to keep it from being too sweet and add another layer of flavor.
It’s chewy, buttery, a little crunchy, finished with flaky salt, and honestly tastes like childhood in cookie form.
Over ¼ pound per cookie — these are thick, bakery-style cookies. Perfect for sharing (or not 😉).
Because these cookies are handmade in small batches, slight variations in size and appearance are part of their charm ❤️
