Mary O’Neill is an Irish soda bread–inspired cookie made with golden and dark raisins, a subtle hint of caraway, crisp edges, and a soft center finished with turbinado sugar, melted butter and a pinch of flaky salt.
 
The cookie is named for my 2nd mom Ellen O’Neill’s mother, who grew up in Ireland. In 2007, Ellen wrote out her mom’s soda bread recipe for me — this cookie is my tribute to that tradition.
 
Each cookie is a Daisy Bakes signature 125g bakery-style cookie — substantial, flavorful, and perfect for sharing.
