Summer in a Cookie!
I named this cookie Bonfire because when we lived in Virginia, we had a bonfire in our yard almost every weekend. The kids would find their sticks, and we’d sit outside under the stars roasting marshmallows for s’mores. Such a great memory.
For this cookie, I make the marshmallows from scratch — without corn syrup — along with homemade graham crackers. Both are folded into my brown butter dough with chopped 70/30 Callebaut chocolate. Each cookie is finished with a few marshmallows on top that melt right into the cookie as it cools.
Because these cookies are handmade in small batches, slight variations in size and appearance are part of their charm. ❤️
